Shelly's Bruschetta
Escape the winter with this delicious summer appetizer
There are few dishes that capture the feeling and flavour of summer better than the bruschetta. Especially during these harsh winter days, the bruschetta with its ripe fresh tomatoes, garlic, cilantro and olive oil, makes for a delicious winter escape. The addition of green chilli pepers give this appetizer an extra kick.
Serves 4-6 people.
Ingredients:
- 10 baguette slices, each cut 1 inch thick
- 4 tbsp olive oil
For Salad Mixture:
- 30-40 red cherry tomatoes, cut into halves
- 1-2 green chilli peppers, chopped finely
- ½ cup fresh cilantro, chopped finely
- 2 garlic cloves, grated
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- ½ tsp kosher salt
Preparation:
Into a salad bowl, add tomatoes, green chilli peppers, cilantro, garlic, olive oil, balsamic vinegar, salt and mix. Set mixture aside. Heat 2 tbsp olive oil in a wide non stick pan, add 5 baguette slices and toast for 1-2 minutes on each side or until it gets golden colour. Repeat with olive oil and the rest of baguette slices. Note: if needed, add extra olive oil to the pan.
Set baguette slices on a flat serving platter and scoop mixture on top of each slice, including its sauce.
